Weekends will bring large crowds, no matter when you go. I recommend getting a Flash Pass on your visit...waits will exceed an hour for many of the attractions (Especially X2 and Tatsu, both of which get queues of 2-3 hours ).

Yeah, Water World's Big 3 are all really fun. Storm is the most thrilling, and Voyage is the most intricate. PS Try to go on Voyage when most of the lights are turned off; It goes from "Whee..." to "OMFG!!!"
