Has anyone eaten one of these?

This is completely unrelated to the Scotch Egg (yet still related to eggs in general) , and has nothing to do with England vs Canada (my vote is for England ), but I've been dying to try this recipe for a while it looks amazing..........

 

 

I guess you basically just take an Avocado, pop out the pit, pour in an egg, top with some bacon and bake it till it's done. Looks simple but insanely delicious.

Here are the Scotch Eggs, and the Avocado thing, I made this past weekend.

 

Scotch Eggs - These ended up being really good. Nothing amazing, but definitely a cool take on breakfast food. I baked them, but most recipes call for them being fried. I used basic Jimmy Dean sausage, and for the breadcrumbs, I used some italian breadcrumbs. In the future, I would double batter the 'eggs' and use Panko breadcrumbs. There was too little coating by using standard breadcrumbs. I think the italian flavoring helped. If I had used regular breadcrumbs, it would have been bland. Of course, it is British! ;)

 

Avocado Eggs - They look great, but didn't taste so great, and I absolutely love avocado. I would much rather just cook an egg and slice a ton of fresh avocado on top. I'm pretty sure they used quail eggs for their avocados. Unless you have access to a massive South American style avocado, they will be way too small for a normal egg. I cleaned out over half the avocado for one, and it barely fit just the yolk. I ended up scrambling my eggs so I could get both the yolk and whites in each avocado.

Dipped in an egg wash, coated with breadcrumbs, then put them in the oven. (Don't know why it's upside down)

Avocados, two eggs were whole, two were scrambled, bacon, and seasonings.

The whole egg one could mainly fit just the yolk.

Not bad, but I'll just make an omelette next time and put all the avocado on top.

I had a feeling that the Avocado egg thing would look better then it would taste, but in those pictures you took it still looks pretty delicious!

 

I'll have to try the scotch eggs sometime, I'm not a huge fan of hard boiled eggs but this looks like an interesting take on them.

I am down with the Scottish aiggs! However, when we made them, we wrapped them in a philo dough. They come out all light and flakey, like a puff pastry.

 

Avacado on the other hand. Ughhhhhhh! (insert throwup emoticon) Just looks too much like baby $h!t. I can't eat it.
