I'm going to Disneyland from August 14th to the 20th and we're planning a day at Knott's Berry Farm. We want to know if there is a better day to go, since we want all of the rides to be open.

I went on a Sunday and I was able to walk on every ride except Xcelerator, which had a 15 minute wait. I've been to several Cedar Fair parks -- WOF, Knott's, Dorney Park, and Cedar Point. With the exception of Cedar Point, the parks seem to be the slowest during the weekdays and Sundays. Saturdays seem to be the most crowded. I went to WOF on a Thursday and I pretty much walked onto every ride and re-rode every ride a few times, even Timber Wolf!

If it isn't a weekend you should be fine. I'm not sure if school is in session during that time, but if it is the weekdays are very mild, and most of the lines are walk ons. If you are able to experience the EXTREMELY rare GhostRider Walk-on be very happy, in the 6 visits to the park I've had it has only happened to me once and it was the best moment of my life.

Everything should be open being that it's summer, but be prepared for crowds.

 

Actually Ghostrider being a walk-on isn't all that rare (it is this time of year, though).
