The crowds traditionally do see a surge in crowds during Mardi Gras week which also coincides with Presidents' Day weekend. It won't be spring break crowds by any stretch but will be considerably more crowded that week than any other week in February.

 

As for the rest of your question, take a look at TPR's park index and do a little research to see what is knew. As your question is extremely broad, it would be just easier for you to search and take advantage of this resource.

You should really avoid Christmas then!

 

Seriously, though, any holiday weekend is going to busier than normal. Unless you have no other choice, I would avoid them at all costs. But even still, I've found that even the busiest day at a park is more enjoyable than a day at work or school, right?

 

And luckily with WDW, assuming you got to the parks early each morning for opening, even during Christmas you can always score some early rides and Fastpasses in before the masses hit.

 

If you didn't get there early, well...can't help you there!
