My favorite paint job is any mouse cars that are made to look like mice. Dorney's, for example. My least favorite that I've seen in person is Lakemont's Skyliner, in that it's all falling off. It's pretty sad when a 105-year-old coaster looks more solid. (Luckily, it rides much better than it looks.)

Custom Design...

 

Bondi Blue track, with Beige supports, and an Amethyst and Amber car. (Amber is actually more of a yellow than red for those who dont know)

White steel coasters like Alpengeist and Dodonpa always look so striking.

 

I also like unpainted yellow pine woodies. The beauty of the design really comes out in a "naked" coaster.

 

Least favorite? Probably Iron Wolf at SFGAm. Maroon does not get my adrenaline going. I'm not a huge fan of chartreuse on modern coasters either. (I can accept it on an 80s looper, because it's period, but nowadays I think that super bright neon green makes a coaster look like a cheap toy.)
